Zucchini Lasagna

The weather was awful. The party was a blast!

2016 was the second warmest year on record according to the National Weather Service. That warmth translated into a ridiculous rain on my 2017 birthday.

I bring this up because I have tracked the weather on my birthday since I was a kid. Almost every year we’ve had snow on my birthday; not just snow on the ground but a falling of snow. I love a good snowstorm, so I would have been happy if there was a blizzard on my birthday but alas, all we got was a misty rain punctuated by a downpour that coincided with the start of my birthday party.

Everyone arrived soaked. That didn’t put a damper on the festivities, though.

I decided to mark my 60th birthday with a small (20 people) party at my favorite Irish pub. I was miserable about turning 60, so I came to the conclusion that it would be better for my psyche if I gathered some folks important to me around me to celebrate. I figured they’d raise my spirits – and it worked...

Zucchini Lasagna

This is a ZReboot recipe. This lasagna has no noodles. Standing in for the noodle layers are zucchini sliced the long way. This is best accomplished with a steady hand and a mandolin slicer but it can be accomplished with a long knife, too. You’ll never miss the noodles. Try this one with kids and they will happily eat their veggies.
