My parents loved to make elderberry pie. I did not like it, but they did. They lived to be 92 years old, so I think you are wrong about eating the berries. Mother added lemon juice to the berries to make them taste better.

We like elderberry jelly. When we are up north near to Traverse City, we look for the many places that have elderberries.
Yes the berries are small and mostly seeds, but that doesn't mean that there isn't a lot of juice.
